Meet the Crew
Crew March - May 25th, 2025

Captain Wayne
Captain Wayne with over 40 years of
boat handling experience. Starting at the age of 10 where he recalls his dad purchasing a small 12-foot fishing boat from Sears to use in the coves of the local freshwater lakes. From there he advanced to competing in bass fishing tournaments progressing to larger and faster boats. He became a pilot at the age of 16, enlisted in the military at age 17 with his dad’s consent and decided to go airborne where he learned Skydiving. Later he founded Eagle Flight Skydiving where he spent years teaching in the civilian world earning every license available. He said that alone didn’t really pay the bills, so he continued pursuing his education and eventually started up a successful technology-based company. Which afforded him the opportunity to have Manna built and move to the Caribbean full-time. With the encouragement from his wife, they together founded a 501(c)(3) nonprofit organization called “Manna for Missionaries” to utilize the Yacht in the off season, as a way of giving back. With so much more that could be added, it
would be extremely rare to find someone more knowledgeable and more diverse to carry you on this Journey through the islands.

Chef
Jules
Chef Jules earned her bachelor’s degree in marketing from New Mexico State University. She has enjoyed the highly rewarding experience of helping others find the homes of their dreams for two decades as a real estate broker. In her spare time, she too discovered two true passions she never realized: cooking and sailing. Which as crazy as it might sound lead her to obtaining her Captain’s license along with the needed STCW certification to cross international
waters. This was just the start as it has given her the freedom to navigate countless Caribbean islands over the last eleven years preparing amazing meals and entertaining Guest along the way. Did I mention Jules owns 2 private yachts and is how she was able to accomplish all this? She now employees a full-time crew aboard and believes that the crystal blue waters, gentle
breezes, colorful sunrises, and sunsets along with the freedom of sailing, brings a special peace and tranquility to life. That blissful feeling becomes evident in all the dishes she prepares, making your meals utterly delightful. Jules looks forward to sharing her spectacular menu with a variety of delectable dishes, assuring an extraordinary culinary experience. Captain Christian
Captain Christian will be returning from paternity leave in South Carolina after his fiancé and previous chef, Laura, stepped off to give birth to their baby girl. However, they both love this life and job so much that they decided it was best for Christian to return and finish out the season!
Christian is a seasoned mariner with over 15 years of Virgin Island exploring. What started as an adventurous journey on the seas has turned into a lifelong passion for sharing the island lifestyle with others. Whether it's cruising, storytelling, or offering a glimpse into the timeless rhythm of life on the water, Captain Christian is dedicated to providing a memorable experience for every guest.
In addition to being the captain of the vessel, he is also the mechanic, the driver, and yes, the dish washer, ensuring that everything runs smoothly and seamlessly behind the scenes. Captain Christian is committed to offering unparalleled service and making each journey as comfortable and enjoyable as possible. With a deep appreciation for the ocean and its islands, he looks forward to taking care of you and showing you the beauty of life on the water.

Chef Nikki
With over ten years of culinary experience in the U.K. Nikki is excited to bring her passion for bold
flavours and fresh, locally sourced ingredients to Leopard 50. She began her culinary journey at 18,
catering high-end weddings and private dinning events, where she gained skills in service, flexibility, and working under Cordon Bleu trained chefs. She then honed her skills in prestigious kitchens, including 2 Michelin-starred The Fat Duck in Bray, and since 2021 has served as the senior head chef at My Neighbours the Dumplings in Hackney, London, a beloved East Asian dumpling house. She has previous experience as a pastry chef as well as knowledge of a variety of cuisines from her varied work
experiences. Alongside her restaurant work, she teaches cooking to children and adults and even
worked in prisons, where she learned the art of making fresh food accessible and enjoyable for
everyone. Nikki specialises in creating memorable dining experiences based on client preferences, combining her expertise in restaurant, catering, and private chef work. She’s a team player with a positive attitude and
a love for adventure.. Having completed the Ashburton Yacht Chef course with Laura, the previous chef on maternity leave, she’s ready to jump onboard and bring her culinary expertise, creativity, and fun-loving spirit to this award-winning Leopard 50 catamaran.
